Ingredients
1 cup cottage cheese
2 large eggs
½ cup rolled oats
1 scoop vanilla protein powder
1 tablespoon honey or maple syrup
1 teaspoon vanilla extract
1 cup mixed berries (blueberries, raspberries, or strawberries)
½ teaspoon baking powder
Pinch of salt
Optional Add-Ins
1 tablespoon chia seeds
1 tablespoon flaxseed meal
White chocolate chips
Chopped almonds or walnuts
Cinnamon for extra warmth and flavor
Instructions
Preheat your oven to 350°F (175°C) and lightly grease a small baking dish.
Blend the cottage cheese, eggs, oats, protein powder, honey, vanilla, baking powder, and salt until smooth.
Fold in the berries gently.
Pour the mixture into the prepared baking dish.
Bake for 30–35 minutes, or until the center is set and the top is lightly golden.
Let cool for 5–10 minutes before slicing and serving.
