Ingredients
– 2 ripe bananas, mashed
– 1 cup cottage cheese
– 2 large eggs
– ½ cup honey or maple syrup
– 1 teaspoon vanilla extract
– 1½ cups oat flour (or blended rolled oats)
– 1 teaspoon baking powder
– ½ teaspoon baking soda
– ½ teaspoon ground cinnamon
– ¼ teaspoon salt

– ½ cup chopped walnuts or pecans
– ½ cup dark chocolate chips
– ¼ cup shredded coconut
– 1 tablespoon chia seeds
– 1 tablespoon flaxseed meal
– Fresh blueberries
Instructions
1. Preheat your oven to 350°F (175°C).
2. Grease or line a 9×5-inch loaf pan with parchment paper.
3. In a blender or food processor, combine the bananas, cottage cheese, eggs, honey (or maple syrup), and vanilla extract. Blend until smooth.
4. In a large bowl, whisk together the oat flour, baking powder, baking soda, cinnamon, and salt.
5. Pour the wet ingredients into the dry ingredients and stir until just combined.
6. Fold in any optional add-ins if desired.
7. Transfer the batter to the prepared loaf pan and smooth the top.
8. Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
9. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
