English Title: Grandma’s Polish Creamy Cucumber Salad

 

My Polish aunt introduced me to this simple family recipe years ago, and it quickly became one of our most requested side dishes. Crisp cucumbers, creamy dressing, and fresh herbs come together in a refreshing salad that’s perfect for summer barbecues, weeknight dinners, or holiday gatherings. Every bite is cool, tangy, and full of comforting homemade flavor.

 

Ingredients

 

– 2 large English cucumbers, thinly sliced

– ½ small red onion, thinly sliced

– 1 cup sour cream

– 1 tablespoon white vinegar or fresh lemon juice

– 1 teaspoon sugar

– 1 tablespoon fresh dill, chopped

– Salt and black pepper, to taste

 

Instructions

 

1. Slice the cucumbers and onions as thinly as possible.

2. Sprinkle the cucumbers with a little salt and let them rest for 15–20 minutes to release excess moisture.

3. Pat the cucumber slices dry with paper towels.

4. In a bowl, whisk together the sour cream, vinegar, sugar, dill, salt, and black pepper.

5. Fold the cucumbers and onions into the dressing until evenly coated.

6. Refrigerate for at least 30 minutes before serving to allow the flavors to blend.

 

This classic Polish-style cucumber salad is creamy, refreshing, and incredibly easy to prepare. It pairs beautifully with grilled meats, roasted chicken, pork chops, fish, or even fresh crusty bread.
