Ingredients
24 cooked escargots (canned or prepared)
24 clean escargot shells or a baking dish with snail wells
150 g (5 oz) unsalted butter, softened
3 garlic cloves, finely minced
3 tablespoons fresh parsley, finely chopped
1 tablespoon fresh chives, finely chopped (optional)
1 small shallot, finely minced
1 teaspoon lemon juice
½ teaspoon salt
¼ teaspoon freshly ground black pepper
Optional Additions
Pinch of cayenne pepper
Fresh thyme leaves
Grated Parmesan cheese
A splash of dry white wine
Lemon zest for extra freshness
Instructions
1. Preheat the oven to 200°C (400°F).
2. Pat the escargots dry with paper towels.
3. In a bowl, combine the softened butter, garlic, parsley, shallot, chives, lemon juice, salt, and black pepper until smooth.
4. Place a small amount of garlic butter into each shell.
5. Insert one escargot into each shell.
6. Fill the remaining space with more garlic herb butter, ensuring the opening is sealed with butter.
7. Arrange the shells in an escargot baking dish or on a bed of coarse salt to keep them stable.
8. Bake for 10–12 minutes, or until the butter is bubbling and fragrant.
