Instructions
1. Season the chicken breasts with salt, black pepper, and paprika.
2. Heat the olive oil in a large skillet over medium-high heat.
3. Sear the chicken for 5–6 minutes on each side until golden brown. Remove from the pan and set aside.
4. In the same skillet, sauté the onion until soft and translucent.
5. Add the garlic and cook for 30 seconds until fragrant.
6. Stir in the grated zucchini and cook for 4–5 minutes until softened.
7. Pour in the chicken broth and cream, then add the thyme and black pepper.
8. Simmer gently for 3–4 minutes until the sauce begins to thicken.
9. Stir in the Parmesan cheese if using.
10. Return the chicken to the skillet and spoon the sauce over the top.
11. Cover and simmer for 8–10 minutes, or until the chicken is fully cooked.
