Rich Chocolate Lava Cake with Vanilla Ice Cream & Strawberries

Ingredients (Makes 2 individual cakes)**

* 100g dark chocolate (70% cocoa)
* 80g unsalted butter (plus more for greasing)
* 2 large eggs
* 60g granulated sugar
* 30g all-purpose flour
* 1/2 tsp vanilla extract
* A pinch of salt

**For Serving:**

* 2 scoops of vanilla ice cream (about 100g)
* 4–6 fresh strawberries, halved (about 100g)
* Optional: powdered sugar for dusting

1. **Prep the oven**: Preheat your oven to 200°C (390°F). Grease two small ramekins with butter and lightly dust with flour. Shake out excess.

2. **Melt chocolate & butter**: In a heatproof bowl, melt the chocolate and butter together over a pan of simmering water (double boiler method). Stir until smooth. Let it cool slightly.

3. **Whisk eggs & sugar**: In a mixing bowl, whisk the eggs, sugar, vanilla extract, and salt until pale and slightly thickened (about 2–3 minutes).

4. **Combine mixtures**: Slowly pour the melted chocolate mixture into the egg mixture, whisking continuously.

5. **Add flour**: Gently fold in the flour until just combined. Do not overmix.

6. **Pour into ramekins**: Divide the batter evenly into the prepared ramekins.

7. **Bake**: Bake for **10–12 minutes**, until the edges are set but the center is still soft. The top should look firm but jiggly.

8. **Serve immediately**: Let the cakes cool for 1 minute. Run a knife around the edge and invert onto plates. Top with a scoop of vanilla ice cream and fresh strawberries. Optional: dust with powdered sugar.
