Strawberry Cheesecake Nachos
Ingredients
Nachos
8–10 flour tortillas
¼ cup melted butter
¼ cup granulated sugar
1 tsp cinnamon
Cheesecake Dip
8 oz cream cheese, softened
½ cup powdered sugar
1 tsp vanilla extract
½ cup heavy whipping cream (whipped to stiff peaks)
Strawberry Topping
2 cups fresh strawberries, diced
¼ cup strawberry preserves or glaze
Optional: 1 tsp lemon juice
Optional Toppings
White chocolate drizzle
Graham cracker crumbs
Mini chocolate chips
Whipped cream
Instructions
1. Make the “Nachos”
1. Heat oven to 375°F.
2. Cut tortillas into triangles.
3. Brush both sides lightly with melted butter.
4. Mix sugar and cinnamon; sprinkle over tortillas.
5. Bake on lined sheets 8–10 minutes, flipping once, until golden and crisp.
6. Cool completely (they’ll crisp up more as they cool).
2. Cheesecake Dip
1. Beat cream cheese until smooth.
2. Add powdered sugar and vanilla; mix well.
3. Gently fold in whipped cream until fluffy and light.
4. Chill until ready to serve.
3. Strawberry Topping
1. Toss strawberries with preserves and lemon juice.
2. Let sit 10 minutes to get juicy.
Assemble
Spread tortilla chips on a platter.
Spoon cheesecake dip over the top.
Add strawberry topping.
Finish with white chocolate drizzle, crumbs, or whipped cream.
