Hearty Homemade Chicken and Vegetable Skillet

Ingredients
2 boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
1 small onion, diced
3 cloves garlic, minced
1 red bell pepper, sliced
1 zucchini, sliced
1 cup broccoli florets
1 cup mushrooms, sliced
1 teaspoon Italian seasoning
½ teaspoon paprika
Salt and black pepper, to taste
2 tablespoons chopped fresh parsley
Juice of ½ lemon (optional)
Instructions
1. Heat the olive oil in a large skillet over medium-high heat.
2. Season the chicken with salt, pepper, paprika, and Italian seasoning.
3. Cook the chicken for 6–8 minutes until golden and fully cooked. Remove and set aside.
4. In the same skillet, sauté the onion and garlic for 2 minutes.
5. Add the bell pepper, broccoli, zucchini, and mushrooms. Cook for 5–7 minutes until tender-crisp.
6. Return the chicken to the skillet and toss everything together.
7. Add the lemon juice if desired and sprinkle with fresh parsley.
8. Serve immediately on its own or with rice, pasta, or mashed potatoes.
Tips
Add shredded Parmesan cheese before serving for extra flavor.
For a spicy version, add a pinch of red pepper flakes.
