Ingredients
2 lbs (900 g) beef chuck, cut into 1-inch cubes
3 tablespoons all-purpose flour
Salt and freshly ground black pepper, to taste
2 tablespoons vegetable oil
1 large onion, diced
3 cloves garlic, minced
4 carrots, peeled and sliced
3 celery stalks, sliced
4 medium potatoes, peeled and cubed
3 cups beef broth
1 cup water
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 bay leaves
1 cup frozen peas
2 tablespoons chopped fresh parsley (for garnish)
Instructions
1. Season the beef cubes with salt and pepper, then coat them lightly with the flour.
2. Heat the vegetable oil in a large Dutch oven or heavy pot over medium-high heat. Brown the beef on all sides in batches, then remove and set aside.
3. In the same pot, sauté the onion until softened. Add the garlic and cook for another minute.
4. Stir in the tomato paste, then add the beef broth, water, Worcestershire sauce, thyme, rosemary, and bay leaves.
5. Return the browned beef to the pot and bring everything to a gentle simmer.
6. Cover and cook over low heat for about 1½ hours, stirring occasionally.
7. Add the carrots, celery, and potatoes. Continue simmering for another 40–50 minutes, or until the vegetables are tender and the beef is melt-in-your-mouth soft.
8. Stir in the frozen peas during the final 5 minutes of cooking.
9. Remove the bay leaves, garnish with fresh parsley, and serve hot with crusty bread or buttery biscuits.
Rich, comforting, and packed with hearty flavors, this classic beef stew tastes even better the next day. Perfect for cozy family dinners!
