Crispy Garlic Herb Potatoes

Ingredients
2 pounds small potatoes (Yukon Gold or baby red potatoes)
3 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon paprika
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons fresh parsley, chopped

Instructions
Preheat your oven to 425°F (220°C).
Wash and dry the potatoes well. Cut larger potatoes in half so they cook evenly.
In a large bowl, combine olive oil, garli

Add the potatoes and toss until fully coated with the seasoning mixture.
Spread the potatoes on a baking sheet in a single layer.
Roast for 35–45 minutes, turning halfway through, until crispy and golden brown.
