Lazy Girl Pecan Pie Bars

INGREDIENTS:

 

 

 

1 box yellow cake mix

 

1/3 cup unsalted butter, melted

 

3 large eggs

 

1 1/2 cups chopped pecans

 

1 cup light corn syrup

 

1 cup packed brown sugar

 

1 teaspoon vanilla extract

 

 

DIRECTIONS:

 

 

 

Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan.

 

In a large bowl, combine the cake mix, melted butter, and 1 egg. Mix until a soft dough forms.

 

Press the dough evenly into the bottom of the greased baking pan. Bake for 10 minutes.

 

While the crust is baking, whisk together the remaining 2 eggs, corn syrup, brown sugar, and vanilla extract in a bowl until smooth. Stir in the chopped pecans.

 

Pour the pecan mixture over the partially baked crust and spread it evenly.

 

Bake for an additional 25-30 minutes, or until the filling is set and golden brown.

 

Let the bars cool completely in the pan before cutting into squares.
