1.5 lbs baby potatoes, halved or quartered if large

4 cloves garlic, minced

3 tbsp olive oil

1/2 cup grated Parmesan cheese

1 tsp dried thyme (or 1 tbsp fresh thyme leaves)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish, optional)

 

INSTRUCTIONS:

Preheat the Oven:

Preheat your oven to 400°F (200°C).

Prepare the Potatoes:

In a large bowl, toss the halved baby potatoes with minced garlic, olive oil, grated Parmesan cheese, dried thyme, salt, and pepper. Ensure the potatoes are evenly coated with the mixture.

Bake the Potatoes:

Spread the coated potatoes in a single layer on a baking sheet lined with parchment paper or aluminum foil.
