For the Donut Dough:

500 grams all-purpose flour

60 grams sugar

1 packet instant yeast (about 7 grams)

250 ml warm milk

2 large eggs, beaten

75 grams unsalted butter, melted

1/2 teaspoon salt

For the Custard Filling:

500 ml whole milk

4 egg yolks

100 grams sugar

40 grams cornstarch

1 teaspoon vanilla extract

For Coating:

100 grams granulated sugar

 

INSTRUCTIONS:

Prepare the Dough:

In a large mixing bowl, combine flour, sugar, and yeast. Gradually mix in warm milk, beaten eggs, melted butter, and salt until the dough begins to form. Knead for about 10 minutes until smooth and elastic.

Cover the dough with a damp cloth and let it rise in a warm place for 1 hour or until doubled in size.

Make the Custard Filling:

In a saucepan, heat milk over medium heat until just simmering. In a separate bowl, whisk together egg yolks, sugar, and cornstarch until smooth.

Gradually whisk in a third of the warm milk into the egg mixture to temper the eggs. Return the entire mixture to the saucepan and continue to cook, stirring constantly, until the custard thickens and coats the back of a spoon. Remove from heat, stir in vanilla extract, and let cool.

Form and Fry the Donuts:

Once the dough has risen, turn it out onto a floured surface and roll to about 1/2 inch thickness. Cut out donut shapes using a round cutter.

Heat oil in a deep fryer or large saucepan to 350°F (175°C). Fry the donuts until golden brown on both sides, then remove and drain on paper towels.

Fill and Finish:

Once cooled, make a small hole in the side of each donut. Use a piping bag fitted with a narrow nozzle to pipe the custard into the donuts.

Roll the filled donuts in granulated sugar until well coated.
