Cinnamon Roll French Toast Roll-Ups

INGREDIENTS:

1/2 cup + 2 tablespoons unsalted butter, softened

1/4 cup light brown sugar

1 tablespoon cinnamon

8 slices thick, soft bread

2 eggs

1/4 cup milk

1 teaspoon vanilla extract

1/4 cup granulated sugar (for assembly)

1 teaspoon cinnamon (for assembly)

1-1/2 tablespoons unsalted butter, softened (for assembly)

1/2 cup cream cheese, room temperature (for icing)

1/4 cup confectioners’ sugar (for icing)

 

DERICTIONS:

Make cinnamon butter and bread: In a bowl, mix butter, light brown sugar, and cinnamon. Cut crusts off bread, roll slices flat, and spread cinnamon butter over each. Roll tightly.

Create your French toast: Whisk eggs, milk, and vanilla. Dip rolls quickly, ensuring a complete coat. Fry in melted butter until golden on all sides.

Make the coating and icing: Mix sugar and cinnamon; coat rolls. For icing, blend butter, cream cheese, and confectioners’ sugar. Use as a drizzle or dip.
