Avocado Chicken Salad Lettuce Wraps

INGREDIENTS:

For the Avocado Chicken Salad:

2 cooked chicken breasts, shredded or diced

2 ripe avocados, peeled and diced

1/4 cup red onion, finely chopped

1/4 cup cilantro, chopped

1/4 cup cherry tomatoes, halved

Juice of 1 lime

Salt and pepper to taste

For the Lettuce Wraps:

Large lettuce leaves (such as butter lettuce or romaine hearts)

Optional toppings: sliced cucumber, shredded carrots, sliced radishes

 

INSTRUCTIONS:

1. Prepare the Avocado Chicken Salad:

1. In a large mixing bowl, combine the shredded or diced chicken, diced

avocados, chopped red onion, chopped cilantro, and halved cherry tomatoes.

2. Squeeze the juice of one lime over the mixture. This will help prevent the

avocados from browning and add a fresh citrus flavor.

3.Season with salt and pepper to taste. Gently toss the ingredients until well

combined. Adjust seasoning if needed.
