Sugar-Free Yogurt Cake Recipe

INGREDIENTS:—

1 ½ cups plain Greek yogurt

 

1/3 cup honey or maple syrup

 

3 large eggs

 

1 tsp vanilla extract

 

1 ½ cups whole wheat flour or almond flour

 

1 ½ tsp baking powder

 

1/2 tsp baking soda

 

1/4 tsp salt

 

Zest of 1 lemon (optional)

 

1/2 cup fresh berries or chopped nuts (optional)

Preparing the Cake:

 

Preheat the Oven:

 

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.

 

Mix Wet Ingredients:

 

In a large bowl, whisk together the Greek yogurt, honey or maple syrup, eggs, and vanilla extract until smooth and well combined.

 

Combine Dry Ingredients:

 

In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and lemon zest (if using).

 

Combine Wet and Dry Ingredients:

 

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

 

Add Berries or Nuts (Optional):

 

Gently fold in fresh berries or chopped nuts if desired.

 

Baking the Cake:

 

Pour Batter:

 

Pour the batter into the prepared cake pan and spread it evenly.

 

Bake:

 

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.

 

Cool:

 

Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
