Skillet Dish with Chicken, Noodles, and Vegetables

Ingredients

For the Skillet Dish:

  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts, diced
  • 1 teaspoon salt (divided)
  • 1/2 teaspoon black pepper (divided)
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 8 ounces egg noodles or your favorite pasta
  • 2 cups chicken broth
  • 1 cup water
  • 1 cup heavy cream (or milk for a lighter version)
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)

Vegetables:

  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup frozen peas (optional)

Optional Garnish:

  • Fresh parsley, chopped
  • Grated Parmesan cheese

Instructions

  1. Cook the Chicken:
Heat the olive oil in a large skillet over medium heat. Add the diced chicken, 1/2 teaspoon of salt, 1/4 teaspoon black pepper, paprika, and garlic powder. Sauté the chicken for 6–8 minutes until cooked through and lightly browned. Remove the chicken from the skillet and set aside.
  2. Sauté Vegetables:
In the same skillet, add the broccoli, carrots, and bell peppers. Sauté for 3–4 minutes until slightly softened. Remove and set aside with the chicken.
  3. Cook the Noodles:
Add the chicken broth, water, and remaining 1/2 teaspoon of salt to the skillet. Bring to a boil. Add the noodles and cook according to package instructions, stirring occasionally to prevent sticking.
  4. Combine Everything:
Once the noodles are tender, reduce the heat to low. Stir in the heavy cream and shredded cheese until the cheese is melted and the sauce is creamy. Add the cooked chicken and sautéed vegetables back into the skillet, along with the frozen peas (if using). Mix everything well.
  5. Simmer:
Let the mixture simmer for 2–3 minutes until everything is heated through and the sauce thickens slightly.
  6. Serve:
Garnish with fresh parsley and grated Parmesan cheese, if desired. Serve hot directly from the skillet.
