6 large potatoes, thinly sliced

1 medium onion, finely chopped

2 cups of cheddar cheese, shredded

1 cup of mozzarella cheese, shredded

1 cup of heavy cream

1/2 cup of milk

6 strips of bacon, cooked and crumbled

2 cloves of garlic, minced

1 teaspoon of salt

1/2 teaspoon of black pepper

2 tablespoons of fresh parsley, chopped

1 tablespoon of butter (for greasing)

INSTRUCTIONS:

Preheat your oven to 375°F (190°C) and butter a large baking dish.

Layer the potatoes and onions in the prepared baking dish, seasoning each layer with salt and pepper.

Create the cheese sauce:

In a saucepan, combine heavy cream, milk, and minced garlic. Bring to a simmer over medium heat.

Gradually add half of the cheddar and mozzarella cheese, stirring until the sauce is smooth and creamy.

Pour half of the cheese sauce evenly over the layered potatoes and onions.

Bake for 30 minutes: Cover with aluminum foil and bake in the oven for 30 minutes.

Add bacon and more cheese: Remove the foil, sprinkle the remaining cheddar and mozzarella cheese, and top with crumbled bacon.

Bake uncovered for another 25-30 minutes or until the potatoes are tender and the top is golden and bubbly.
