Cranberry Orange Bread

INGREDIENTS:

Bread:

2 cups all-purpose flour

1 cup granulated sugar

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 tablespoon grated orange zest

¾ cup freshly squeezed orange juice

⅓ cup vegetable oil

1 large egg

1 teaspoon vanilla extract

1 ½ cups fresh or frozen cranberries, coarsely chopped

Glaze:

1 cup powdered sugar

2-3 tablespoons freshly squeezed orange juice

 

INSTRUCTIONS:

Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan and set it aside.

Prepare the dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and orange zest.

Combine wet ingredients: In another bowl, mix the orange juice, vegetable oil, egg, and vanilla extract until well combined.

Mix wet and dry ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. Gently fold in the chopped cranberries.
