INGREDIENTS:

2 cups cooked chicken breast, diced

1 cup uncooked white rice

2 cups chicken broth

1 cup heavy cream

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup chopped onions

1/2 cup chopped celery

1/2 cup chopped carrots

2 cloves garlic, minced

1/4 cup all-purpose flour

2 tablespoons butter

2 tablespoons olive oil

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

INSTRUCTIONS:

Preheat Oven: Preheat your oven to 375°F (190°C).

Cook Rice: In a medium saucepan, cook the rice according to the package instructions using chicken broth instead of water for added flavor.
